Banana & Cinnamon Breakfast Flourless Muffins

I love Pinterest! Who doesn’t? You can share ideas, find new ones, and get creative! I came across Banana Oatmeal Muffins from blogger Keeping Up with the Joneses  from Pinterest and was inspired to make a modified version. This recipe is easy, easy, easy, and  the result was fabulous! A true comfort food in the morning when you are on the go and looking for something moderately healthy or a great addition to your morning coffee.

Ingredients:

2  1/2 cup oats (I used Quaker old fashioned Oatmeal)*

1 cup of plain low fat greek yogurt (I used FAGE Creek Yogurt)

2 eggs

3/4 cup sugar

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp cinnamon

2 bananas

non-stick cooking spray

Instructions:

1. Preheat oven to 400 degrees. Spray tin with non-stick cooking spray.
2. Place all of the ingredients in a blender or food processor such as a Cusinart. Blend until oats are smooth.**
3. Divide the oatmeal/banana batter among the cupcake pan and bake for 20-25 minutes, or until a toothpick comes out clean.195

 

Cook’s Note:

*You can easily make this recipe Gluten Free with Bob’s Red Mill Gluten Free Oats. Just substitute the Quaker Oats for Bob’s Red Mill. It is advisable to purchase gluten free oats rather than using Quaker oats because there can be cross contamination with wheat in Quaker Oats.

**When blending the ingredients together you may have to stop blending and move the solids around so that it will blend completely. It took me a few times of using a spoon to get my batter to blend completely.
