Prosciutto, Cantaloupe, & Goat Cheese

Who doesn’t like a little bit of salt, a little bit of sweetness, and a little bit of creamyness? Yes, I just made creamyness up. I decided to combine cantaloupe, prosciutto, and goat cheese and the result was simply delicious! Serve this as a nice appetizer.

Prosciutto, Cantaloupe, & Goat Cheese

Yields 4 servings

Ingredients:

2 cups cantaloupe cubed.

12 slices of prosciutto

3/4 cup goat cheese

Fresh Thyme (optional)

12 toothpicks

Directions:

1. Preheat oven to 375 o F

2. Separate each slice of prosciutto and spoon 1 Tbsp of the 3/4 cup goat cheese on one end side of the prosciutto slice. Roll the prosciutto and place a toothpick in the wrapped prosciutto. Proceed with the additional prosciutto slices adding 1 Tbsp of goat cheese in each slice until you have 12 rolled prosciutto slices.

3. Lay the prosciutto on a baking sheet and bake for 8-10 minutes or until the cheese has melted and the prosciutto is slightly crispy.

4. Remove from oven. Place 1/2 cup of cantaloupe on a plate. Take 3 of the prosciutto slices wrapped in goat cheese and place on the bed of cantaloupe. Sprinkle with Thyme. That is one serving. Repeat process to make 4 servings.
